Vegan Protein Banana Bites

Super soft, and naturally sweetened, these cake-like bites are so good! They make for the perfect pre or post-workout snack.

Recipe

Ingredients:

Dry Ingredients:

  • 100g Thrive Vanilla Plant-Based Protein
  • 60g All-purpose flour
  • 5 tbsp of natural sweetener (stevia, erythritol, or monk fruit)
  • 1 tsp baking powder

Wet ingredients:

  • 2 medium overripe bananas (mashed)
  • 6 tbsp of coconut oil
  • 2 tbsp aquafaba (or 1 egg white)

Instructions:

  • Preheat oven to 350°F.
  • Line a baking tray with baking parchment.
  • Mix all the dry ingredients together and whisk to combine.
  • Gently melt the coconut oil.
  • Mash the bananas until smooth.
  • Mix the coconut oil, banana, and aquafaba together and whisk to combine.
  • Add the wet mix into the dry ingredients and combine.
  • Shape the dough into bite sized balls, and bake for 12-14 minutes
  • Serve and enjoy!
